Mills Brewing make beer with minimal modern intervention, relying on local wild yeast cultures and the influence of nature to ferment.  Resin was produced from a single brew produced in August 2022.

The wort was made with barley and wheat malts, using a turbid mash technique. Sticky, high oil, US grown hops were added during a long boil. Fermentation took place in three freshly emptied barrels from Oliver’s Cider & Perry, for sixteen months.

The finished blend was dry-hopped with Pacific Jade hops, before bottle conditioning for (a relatively short) three months.

Their fourth edition of Saison Cider Cask is a blend of four barrels produced in November 2020 and June 2022.

The contrasting brews used a variety of grains and a mixture of aged and fresh European hops.

Fermentation took place in fresh cider barrels from Oliver’s Cider & Perry Company.  The finished blend was dry-hopped with whole leaf Kazbek and brewers gold, before conditioning in bottle.

This particular cuvée Armand & Gaston has been blended with lambics from 7 different barrels and originating from 11 different brews. The oldest portion of lambic was brewed on the 28th of November 2014. While blending, they added spring honey from their own beehives.

This beer is 100% natural, authentic, spontaneously fermented, and crafted with steadfast adherence to tradition, like Armand and Gaston Debelder have always done it.
