This native grape variety its so adapted to the terroir that it ripens very late, in October, after the reds. Scrummy white fruits, flowers, ripe pears. Creamy and well balanced acidity.
A very pale orange pink colour, the nose is elegant with sweet aromas of stone fruits, mineral and anise, supported by apricot, mirabelle plum and citrus notes. Full and well rounded on the palate, with plenty of weight, yet still elegant, lively and light in body. Easy to drink.
Fattoria di Vaira is one of the largest biodynamic farms in Italy. Here they cultivate vegetables, grains and cereals, and produce fresh cheeses, olive oil and honey. After several years of applying biodynamic practices, their soil has been restored, reaching a degree of purity similar to wild soil.
Wild & Wilder were founded by Master of Wine duo Fergal Tynan and Giles Cooke, with Giles also being the winemaker. Both men have worked extensively around the world learning their craft including time in Europe, North and South America before settling in Southern Australia. The duo work with several growers across various regions to hand craft outstandingly good wines at their Adelade Hills winery that are seriously well made, bags of fun and extremely drinkable.

In the heel of Italy, Manduria is considered the birth place of the native Primitivo grape, and was officially recognised as such in the 1970s when a DOC was created for the region.
As well as making high quality examples of Puglia’s most famous vinous export, the co-operative is well versed in producing fascinating whites from Fiano and Verdeca. This rare variety of native grape is picked from 15 to 20 year old espalier trained vines in the middle of September. The nose shows aromatic white flowers mixed with citrus notes as well as pear and pineapple. Dry on the palate this is fresh and mineral like.

Tucked behind the Serra Grossa, at the top of the Alrorins-Alcusses valley, is the rural idyl of Celler del Roure, an estate developed by Pablo Calatuyud and his father to shine a light on a more ancient and authentic style of Valencian wine and away from the bulk production the area was becoming more recognized for. His intention to rehabilitate long-forgotten grapes such as Mando, Arcos and Verdil was solidified with the discovery of a 500-year-old cellar on the mountainside property, with subterranean clay amphoras ‘tinajas’ in near perfect condition.
Aged in Tinijas shows the fresh and complex flavours of this wine. Ripe tangerines from the Verdil, sweet spice from the PX, balanced with fresh and mouth watering citrus, melon and a touch of biscuit from the Chardonnay and Macabeo. The grapes for this white blend (40% Viognier, 40% Chardonnay and 20% Chenin Blanc) were hand selected from a variety of locations in Somerset West, Stellenbosch, Wellington and Paarl. They combine magnificently to produce a beautifully rounded, full bodied and well balanced wine. A bright, flinty nose with lime, green apples, tangerine and honeysuckle. The wine has had 12 month’s lees contact, adding creaminess and complexity. Absolutely sublime.
We love this wine with seared tuna steaks, tempura prawns with sweet chilli dipping sauce and mushroom wellington.
