The Brut is the quintessential party wine, ideal for the aperitif and the end of the meal, although preferably both! Its balance makes it perfect for a more sophisticated dinner as well.

We work our Brut according to the Methode Traditionnelle, but with a personal touch. We choose to harvest the grapes at a good maturity, early in the morning to help retain the quality of the fruit as much as possible. The must is fermented in stainless-steel tanks in our cellar. The wine then ages on its lees prior to bottling. Once bottled, the natural sugar from the grapes will re-ferment , it is this second fermentation that creates the bubbles. The wine then spends a long time, about 20 months, sur latte before being disgorged (when the crown caps are removed and the “mushroom” cork is fitted).
The respect of our land and nature on the whole is extremely important to us. We consider our environment daily ; it affects everything we do from the way we think to the way we work. We have always run our estate using methods which promote a healthy ecosystem and preserve the land keeping it healthy and workable for the future.
From the beginning we have worked the estate following sustainable methods. To finalise approach we became members of Terra Vitis (association of winegrowers around France who worked with sustainable feelings) and consequently became certified sustainable in 2005. This association is run by passionate vignerons and technicians that represent sustainable viticulture. The charter is adaptable to each region since it is difficult to grow vines in the same way in all the regions of France.
