Domaine Sigalas Santorini Assyrtiko
£54.95
Domaine Sigalas winery is located outside the village of Oia on Santorini’s northern plain, surrounded by old, ungrafted vines rooted in mineral-rich volcanic ash. The estate now manages roughly 40 hectares of estate and leased vineyards across the island, many exceeding 50 years of age. They are trained in the traditional basket-shaped ‘kouloura’ system to protect the fruit from Santorini’s fierce Aegean winds.
Assyrtiko dominates the vineyard holdings, complemented by Aidani, Athiri, Monemvasia, Mandilaria, and Mavrotragano. Yields are naturally low, and the fruit is concentrated, saline, and pure.

Description
Santorini forms part of the Cyclades island complex in the South Aegean Sea and sits atop an active underwater caldera. Its volcanic soils are predominantly composed of pumice, with varying proportions of lava and pyroclastic material. The island’s viticultural zone begins at sea level and rising to 250 metres above sea level in terraces. Santorini’s vine training systems are both ancient and unique, shaped by the island’s sandy soils, strong spring winds, intense summer sun and the timing of vine growth. The most emblematic system is the kouloura (also known as giristi), in which vine canes are woven into a basket-like shape to protect the grapes from wind and sun.
