Founded in 2007, Pheasant’s Tears produces artisanal natural wines with ancient Georgian techniques, growing rare endemic grape varieties and harvesting with organic processes. Their name comes from a Georgian tale in which the hero claims that only a wine beyond measure could make a pheasant cry tears of joy, and with family winemakers that have been making wine for 8 generations as well as Georgia’s rich soil, Pheasant’s Tears strives to meet this standard.

A classically made orange wine with aromas of raw honey, walnuts and apricots which follow through onto the palate.  A full bodied wine that’s quite versatile on the table but will stand up well with roasted chicken or even, duck and quail.

Description

Qvevri were the first vessels ever to be used for wine fermentation, with archaeological finds dating back to 6000 BC. Qvevriare clay vessels lined with beeswax and completely buried under the ground where the temperature stays eventhoughout the year, allowing the wines to ferment in the natural coolness of the earth.

Pheasant’s Tears qvevri vary in age but, some date back to the mid 19th C.  They built the cellar in the vineyard itself to minimize the damage to the grapes in transportation, allowing them to harvest and press before the hot hours of the sun. It is usually a question of hours before the harvested grapes are already pressed and in the cool qvevri.
