Thymiopoulos farms organically in the hills around Trilofos and Fytia in Naoussa, where mixed clay‑limestone soils and altitude give Xinomavro both ripeness and lift. Apostolos Thymiopoulos has become one of the key figures in modern northern Greek wine, known for gentle extraction, spontaneous fermentations and a focus on purity and vineyard character. Jeunes Vignes comes from younger parcels but is handled with the same care as his flagship wines.

The wine is vivid and aromatic, with red cherry, pomegranate and a touch of tomato leaf. The palate is fresh with fine tannins, clean fruit and a lightly savoury note that anchors the finish. It’s an expressive, approachable take on Xinomavro that still carries the definition of its Naoussa origins.
