Payten and Jones has always been a winery to follow its own path, they specialise in minimal intervention, natural farming and winemaking. As ever with wines from these guys there is loads of red fruit up front from the whole bunch fermentation,  leading to notes of smoked bacon studded with black pepper. The wine shows poise while still having a little tannic grip to keep everything in check, a modern style of Yarra Valley this!
